NASI GORENG
(Serves 6)
There's many different recipes and variations for preparing Nasi Goreng, as there are households in Bali, but here's one that I like to use. Selamat Makan !
3 eggs
4 tbsp oil
6 shallots (small red onions, not spring onions), finely chopped
2 cloves garlic, finely chopped
200g chicken meat, finely sliced
200g raw prawn flesh, diced (optional)
¼ white cabbage, shredded
½ tbsp sambal olek (crushed chilli paste), or to taste
4 cups cooked rice, cold*
2 tbsp soy sauce
1-2 tbsp sweet soy sauce (Kecap Manis)
1-2 tbsp tomato sauce
2 tbsp fried shallots (available from Asian shops), for garnish, optional
1 small Lebanese cucumber, thinly sliced, for garnish
1 tsp fresh red chilli, finely sliced, for garnish
* It's important that the rice is cold, so that the mixture isn't soggy or sticky when cooking.
1. Beat eggs with salt and pepper to taste. Heat a little oil in a frying pan and make an omelette with half of the beaten eggs. Remove to a plate to cool (do not fold). Repeat with remaining half of eggs. When cool, place the 2 omelettes on top of each other, roll up and cut into thin strips.
2. Heat 2 tbsp of oil in a large frying pan or wok until hot. Add shallots and garlic and fry until golden.
3. Add chicken and prawns and fry for 1-2 minutes, until cooked through. Add cabbage continue to fry for 1 minute. Add sambal olek and mix through well.
4. Add remaining 2 tbsp of oil to wok, increase heat to very high heat (you want to keep the mixture nice and dry) and add cooked rice (TIP : With wet hands, rub rice together to separate grains as you put it into the wok) and continue to mix thoroughly while stir-frying until rice is heated through.
5. Add soy sauce, kecap manis and tomato sauce and stir through until well mixed.
6. Remove from heat and serve garnished with strips of omelette, Fried Shallots (if using), sliced cucumbers and red chilli.
Variation : I sometimes stir through some shredded carrot and shredded baby spinach to add some colour to the fried rice. Add any other cooked vegetables of your liking.
