THAI CHICKEN & COCONUT SOUP (Tom Kha Gai)
(Serves per serve)

Memories of our trip to Bangkok last month ! Here's an easy, yet authentic, Thai soup to liven up those taste buds.

  • 100g chicken breast*, sliced thinly
  • 100ml coconut milk** (or cream)
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp lemon or lime juice 
  • 200ml chicken stock (or water)
  • 4-5 slices galangal (Thai ginger)
  • 1/2 stalk of lemongrass, crushed and tied into a knot
  • 2 kaffir lime leaves, torn in half
  • 1 shallot, crushed
  • 1 small red chilli, deseeded and sliced

1. Slowly heat coconut milk in a saucepan until it just starts to simmer.

2. Add the chicken and stir until it is half cooked.

3. Stir in fish sauce, sugar and lime/lemon juice.

4. Add the chicken stock and the herbs and bring just to the boil. Serve

* Vegetarian option - substitute green beans and fresh baby corn in place of the chicken.

** For a lower fat option, reduce the quantity of coconut milk and increase the same proportion of chicken stock, determined according to your taste.
